Chocolate-Dipped Apple Slices

You will need:

2 tablespoons lemon juice; 2 cups water; 3 large apples, cored and cut into 1/2 inch wedges; 1 cup chocolate chips; 3 tablespoons butter or 1 bottle prepared hardening chocolate sauce (such as Magic Shell)

Preparation:

Line a baking sheet with waxed paper. In a large bowl, combine lemon juice and water. Place apples in lemon juice mixture. Toss to coat apples with lemon juice mixture. Set aside. If you don't have a microwave, skip this step and use hardening chocolate instead. Place chocolate chip and butter in a microwave safe dish. Microwave on high for 1 minute. Stir well. If chocolate is not completely melted, microwave on high for 20 seconds more and stir. Repeat until chips are melted. Place apple slices on a paper towel and pat dry with another paper towel. If you made your own chocolate sauce, dip apple slices halfway into chocolate mixture and place on baking sheet. If you are using hardening chocolate sauce, arrange apple slices on baking sheet and drizzle with chocolate. Refrigerate apple slices for about 1 hour or until chocolate has set.

Makes 30 apple slices. If the chocolate mixture begins to set before you are finished dipping the apples, microwave on high for about 20 seconds and stir.

 

Frosty the Snowball

You will need:

4 tablespoons butter; 1 cup light brown sugar; 3 to 4 drops green food coloring; 2 cups crispy rice cereal; cinnamon candy (optional); 1 quart ice cream

Preparation:

Line a baking sheet with waxed paper. Melt butter in a large saucepan over medium-low heat. Add sugar and stir well. Add three to four drops of green food coloring and stir well. Add cereal and stir gently. Spoon cereal mixture onto waxed paper and divide into four pieces. Form each piece into a wreath. If you like, decorate the wreaths with cinnamon candy. Refrigerate wreaths for about 1 hour or until set. Before serving, place a scoop of ice cream in the middle of each wreath.

Serves 4

 

 

Ho-Ho-Holiday Omelette

You will need:

6 eggs; 1/2 cup milk; 1 cup shredded cheese; 1/2 teaspoon salt; 1/2 teaspoon pepper

ADDITIONAL INGREDIENTS (OPTIONAL)

1/2 cup chopped ham; 3 tablespoons chopped onion; 3 tablespoons chopped green pepper; 3 tablespoons chopped tomato; 1/4 cup sliced mushrooms; 3 tablespoons chopped black olives

Preparation:

Preheat oven to 375 . Grease a 9 by 9 inch square baking pan or a 9 inch round baking pan. In a medium bowl, beat eggs with a fork. Add milk, cheese, salt, and pepper and stir well. Stir in as many additional ingredients as you like. Pour egg mixture into baking pan. Bake for 30 to 40 minutes or until eggs are completely set.

The more additional ingredients you add, the longer the omelet ill take to cook.

Serves 4

 

Cheery Hot Chocolate

 You will need:

2 tablespoons chocolate syrup; 1 3/4 cups milk; 1 large marshmallow or 1 teaspoon creamy peanut butter

Preparation:

Combine ingredients in a small saucepan. Cook over medium heat, stirring constantly, until hot chocolate is warm. Pour into a mug and serve.

To microwave, combine chocolate syrup and milk in a microwave safe mug. Microwave on high 1 minute. Add marshmallow or peanut butter. Microwave on high 30 to 40 seconds longer. Stir before serving.

 

Fantastic Fudge

 You will need:

3 cups chocolate chips; one 14 ounce can sweetened condensed milk; 1/4 teaspoon vanilla; 1 cup chopped walnuts

 Preparation:

Grease an 8 by 8 inch pan. Combine chocolate chips, milk, and butter in a medium saucepan. Cook over medium- low heat, stirring constantly, until chocolate chips are melted. Remove pan from heat. To microwave, place chocolate chips, milk, and butter in a microwave safe dish. Microwave on high for 2 minutes and stir. If chocolate is not completely melted, microwave on high for 20 seconds more and stir. Repeat until chips are melted. Stir in vanilla and walnuts. Pour chocolate mixture into pan and smooth with a spoon. Refrigerate for about 1 hour or until set. Cut into small squares.

Makes 49 to 64 pieces.

 

Starry Biscuits

 You will need:

Flour; 1 can refrigerator baking powder biscuits (10 biscuits per can); jam or jelly

SPECIAL EQUIPMENT: Star Cookie Cutter

 Preparation:

Preheat oven to temperature called for on biscuit package. Lay out a large piece of waxed paper. Dust waxed paper lightly with flour. Separate biscuits and place on waxed paper. Dip cookie cutter in flour, and cut biscuits into star shapes. (If cookie cutter is slightly larger than biscuits, gently press the dough with the palm of your hand to make biscuits larger). Arrange biscuits on a baking sheet. Press your thumb into the center of each biscuit to make a hollow. Use a teaspoon to fill hollows with jam. Bake according to directions on biscuit package.

Makes 10 biscuits
